Ingredients

  • 4-5 pounds red potatoes, peeled and cooked
  • 1 - 8 ounces package of cream cheese
  • 1 cup half and half or cream
  • 1/2 cup butter
  • 1 - 1 1/2 teaspoons sea salt, or to taste
  • 1/2 teaspoon fresh ground black pepper, or to taste
  • 1 1/2 - 2 tablespoons chives, chopped, or 2 tsp dried

How To Make make ahead mashed potatoes

  • Step 1
    While potatoes are still warm, add cream cheese, half and half, butter, salt, pepper and chives.
  • Step 2
    Mash and whip well. Place in buttered casserole. Refrigerate over night or up to 3 days.
  • Step 3
    Remove from refrigerator 1/2 an hour before baking. Bake at 350 for 1 hour or until top is a golden brown.
