Spice up your next batch of mashed potatoes with a little "kick" from chipotle peppers in adobo sauce. These peppers/sauce are hot so use according to your preference. Cook time is for baking time only.

Ingredients

  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • - vegetable cooking spray
  • 3 1/2 pounds new potatoes, cut into 1-inch pieces
  • 3/4 cup shredded smoked gouda cheese, divided
  • 1 cup fat-free half-and-half
  • 2-3 - chipotle peppers in adobo sauce ( or to your liking)
  • 1/2 cup butter (can use margarine)
  • 1 package 4-oz. pkg. fat-free cream cheese, softened
  • 1/4 teaspoon salt
  • - pepper, if desired

How To Make mashed potato bake w/ smoky gouda & chipotle peppe

  • Step 1
    In a skillet, saute garlic in oil over medium-high heat 2-3 minutes (do not burn). Set aside.
  • Step 2
    Bring potatoes and water to cover to a boil in a large pan. Reduce heat and cook 30 minutes or until potatoes are tender - then drain.
  • Step 3
    Mash potatoes in a large bowl. Stir in garlic, 1/4 cup gouda cheese, half and half, chipotle peppers, butter, cream cheese and salt - blend well.
  • Step 4
    Spoon mixture into a greased (with cooking spray) in a 13 x 9 inch baking dish. Sprinkle with remaining 1/2 cup cheese. Bake at 350 degrees for 30 minutes or until cheese is melted.
