Spice up your next batch of mashed potatoes with a little "kick" from chipotle peppers in adobo sauce. These peppers/sauce are hot so use according to your preference. Cook time is for baking time only.

Ingredients
- 3 cloves garlic, minced
- 1 teaspoon olive oil
- - vegetable cooking spray
- 3 1/2 pounds new potatoes, cut into 1-inch pieces
- 3/4 cup shredded smoked gouda cheese, divided
- 1 cup fat-free half-and-half
- 2-3 - chipotle peppers in adobo sauce ( or to your liking)
- 1/2 cup butter (can use margarine)
- 1 package 4-oz. pkg. fat-free cream cheese, softened
- 1/4 teaspoon salt
- - pepper, if desired

Step 1In a skillet, saute garlic in oil over medium-high heat 2-3 minutes (do not burn). Set aside.

Step 2Bring potatoes and water to cover to a boil in a large pan. Reduce heat and cook 30 minutes or until potatoes are tender - then drain.

Step 3Mash potatoes in a large bowl. Stir in garlic, 1/4 cup gouda cheese, half and half, chipotle peppers, butter, cream cheese and salt - blend well.

Step 4Spoon mixture into a greased (with cooking spray) in a 13 x 9 inch baking dish. Sprinkle with remaining 1/2 cup cheese. Bake at 350 degrees for 30 minutes or until cheese is melted.
