maple bacon potato salad
I like the combination of bacon and maple syrup. So, not only for pancake or toast which I love, but also I thought it was going to work for salad. I picked potato to make salad using these my favorite ingredients. This is my best potato salad!

Ingredients
- 2 - russet potatoes (about 1 lb)
- 1 - zucchini (about 6 oz)
- 5 slices bacon
- 1/2 tablespoon lemon juice
- 4 tablespoons mayonnaise
- 1 teaspoon dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon caper, minced
How To Make maple bacon potato salad

Step 1Peel and dice potatoes. Cut zucchini into half lengthwise and slice each halved zucchini thinly crosswise.

Step 2Boil water in a saucepan and add pinch of salt. Put potatoes in the saucepan and cook until tender. When the potatoes are cooked, transfer to the colander to drain and pour lemon juice over the potatoes. Let stand.

Step 3While potatoes are cooking, in another saucepan, boil water, add pinch of salt, put zucchini in the saucepan. When it boils again, remove from the heat, transfer to the colander to drain. Rinse zucchini in cold running water and drain well.

Step 4Cook bacon in a skillet (without oil) until crisp. Then chop.

Step 5In a bowl, combine mayonnaise, Dijon mustard, maple syrup and minced caper. Mix well. Add potatoes, zucchini and bacon. Toss to coat.
