These delicious Manchego mashed potatoes are the perfect side dish for any Spanish recipe.

Ingredients

  • 2 pounds yukon gold potatoes, peeled and halved
  • 6 tablespoons heavy cream
  • 1/4 cup whole milk
  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/2 cup manchego cheese, grated

How To Make manchego mashed potatoes

  • Step 1
    Add the potatoes to a large pot and cover with cold water.
  • Step 2
    Bring to a boil and then simmer until fork tender.
  • Step 3
    Drain the potatoes and mash with a potato masher.
  • Step 4
    In the meantime, heat the cream, milk, butter, salt, and olive oil until warm.
  • Step 5
    Slowly add in the warm liquids while mashing.
  • Step 6
    Fold in the grated Manchego cheese.
  • Step 7
    Taste for salt and adjust if necessary.

    Serve immediately.

    Notes: To reheat, warm the mashed potatoes in the microwave and heat about 1/4 cup of whole milk separately. Drizzle in the milk little by little until the potatoes are at the desired consistency.
