Ingredients For manchego mashed potatoes

2 lbyukon gold potatoes, peeled and halved

6 Tbspheavy cream

1/4 cwhole milk

2 Tbspbutter

2 Tbspextra virgin olive oil

1/2 cmanchego cheese, grated
How To Make manchego mashed potatoes

1Add the potatoes to a large pot and cover with cold water.

2Bring to a boil and then simmer until fork tender.

3Drain the potatoes and mash with a potato masher.

4In the meantime, heat the cream, milk, butter, salt, and olive oil until warm.

5Slowly add in the warm liquids while mashing.

6Fold in the grated Manchego cheese.

7Taste for salt and adjust if necessary.

8Serve immediately.

9Notes: To reheat, warm the mashed potatoes in the microwave and heat about 1/4 cup of whole milk separately. Drizzle in the milk little by little until the potatoes are at the desired consistency.
