How to Make Mama Mary Croquettes
- 1Melt butter,remove from heat and add flour. Return to the heat, stirring constantly, make a roux, add milk until the mixture leaves sides of saucepan.
Add the meat or fish,continually mixing. Spread mixture in a shallow pan or on a plate and allow to set.
Toss them through flour, then dip into beaten egg and then into the breadcrumbs.
Fry in hot oil until golden brown.
