My daughter makes this and the first time she made it for Thanksgiving, it's been a part of our Thanksgiving ever since.

Ingredients For make ahead mashed potatoes

  • 6 md
    potatoes
  • 1/2
    of an 8oz carton of sour cream
  • 3 oz
    pkg cream cheese cut up
  • 1 Tbsp
    margarine or butter
  • 1 tsp
    pepper
  • 1/4-1/2 c
    milk
  • 1 Tbsp
    margarine or butter
  • salt & pepper to taste

How To Make make ahead mashed potatoes

  • 1
    Peel & quarter potaotes;cook comered in boiling salt water for 20 to 25 min or until tender;drain & mash
  • 2
    Add sour cream,cream cheese,1 tbs margarine,salt & pepper;gradually beat in enough milk to make smooth & fluffy

    turn into a greased 1 1/2 qt casserole dish. cover w/foil & chill up to 24 hrs
  • 4
    To serve, dot with remaining margarine; bake uncovered in a 350 oven about 45 min or until heated.

    Recipe can be doubled;put inot a 3 qt casserole; bake for 1 hr; Stir twice
