I got this recipe from my best friend and @ hoildays she makes this .. They are wonderful These can be made several days ahead and kept in the refrigerator

Ingredients
- - 5 pounds baking poatoes
- - 1/2 cup ( 1 stick ) butter
- - 1 cup sour cream
- - 8 ounces cream cheese softened
- - 1 tsp salt, or to taste
How To Make " make ahead mashed potatoes "

Step 1scrub, peel & rinse the poatoes & cut them into 2 inch pieces.

Step 2place them in a large pot and cover with water. boil until fork tender, approximately 18 - 20 mins

Step 3drain the potatoes & add remaining ingredients. mash & mix well.

Step 4Transfer mashed potatoes to a shallow baking dish and cover with foil.

Step 5Potatoes can be kept warm in oven at this point or refrigerate or frozen

Step 6when ready to to bake potatoes preheat oven to 350 and bake 30 to 45 mins or until hot
