logan's greeky smashed potatoes
Gotta have taters with turkey. These are what I came up with for Easter Dinner. They were simply smashing. The lemon zest just brightens up the the whole potato plate. Cooking with Passion. sw :)

Ingredients
- 3 pounds red skinned potatoes, cut in chunks
- 1/3 cup half and half-warm or soy milk
- 1/2 stick butter-room temperature or 4 tbsp earth balalnce spread
- 1/4 cup extra virgin oilve oil
- 2-3 tablespoons green onions, sliced
- 2 large garlic cloves, grated
- 1 tablespoon all purpoose greek seasoning**less if desired**
- 1 teaspoon oregano, dried
- 1 large lemon zest, grated
- - salt & pepper to taste
How To Make logan's greeky smashed potatoes

Step 1Boil potatoes in large pot of salted water for 15 -20 minutes or until fork tender. Drain potatoes in a colander. Add potatoes back to pot. Smash the potatoes with whatever is handy. Add remaining ingredients. Continue to smash until all the ingredients are combined. Drizzle with extra oil. Serve warm.
