Logan's Greeky Smashed Potatoes

Gotta have taters with turkey. These are what I came up with for Easter Dinner. They were simply smashing. The lemon zest just brightens up the the whole potato plate. Cooking with Passion. sw :)

3 lb
red skinned potatoes, cut in chunks
1/3 c
half and half-warm or soy milk
1/2 stick
butter-room temperature or 4 tbsp earth balalnce spread
1/4 c
extra virgin oilve oil
2-3 Tbsp
green onions, sliced
2 large
garlic cloves, grated
1 Tbsp
all purpoose greek seasoning**less if desired**
1 tsp
oregano, dried
1 large
lemon zest, grated
salt & pepper to taste


1Boil potatoes in large pot of salted water for 15 -20 minutes or until fork tender. Drain potatoes in a colander. Add potatoes back to pot. Smash the potatoes with whatever is handy. Add remaining ingredients. Continue to smash until all the ingredients are combined. Drizzle with extra oil. Serve warm.
