loaded mashed potato casserole
This is easy to make because it starts with Instant Mashed Potato Flakes. I keep instant mashed potatoes because that is how I feed my sourdough starter, but they are so handy for other uses. Of course you can use real potatoes for this instead: just make about 6 servings of mashed potatoes.

Ingredients
- 1 3/4 cups boiling water
- 3/4 teaspoon salt
- 3 tablespoons butter
- 1 cup milk or light cream
- 2 cups dry instant potato flakes
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 8 slices bacon, cooked crisp and crumbled
- 3 green onions, thinly sliced

How To Make loaded mashed potato casserole

Step 1In a large bowl, combine boiling water, salt, butter, milk, and potato flakes. Stir with a fork until potatoes are well-mixed.

Step 2Preheat oven to 350 degrees F. Prepare a 2-quart baking dish with cooking spray.

Step 3Combine mashed potatoes with sour cream, mixing well. Fold in 11/2 cups of the shredded cheese. Spoon mixture into prepared baking dish.

Step 4Bake potatoes for 25 minutes. Remove from oven and top with remaining cheese, green onions, and bacon. Return to oven for 5-10 minutes to melt cheese. Allow to rest 5 minutes before serving.
