susan's loaded baked potato salad
I needed a quick dish to go with oven fried chicken - so it had to be potato salad! I had some cheese already grated, and some bacon already made into bits, so adding a little sour cream and onion gave me a very nice side dish.

Ingredients
- 3 large potatoes, peeled and diced
- 1/2 cup olive oil mayonnaise (reduced fat)
- 1/3 cup low fat sour cream
- 1 tablespoon sugar
- - salt and pepper to taste
- 1/4 cup finely chopped red onion
- 3 tablespoons bacon bits
- 1/4 cup shredded cheddar cheese
How To Make susan's loaded baked potato salad

Step 1Cook potatoes in boiling salted water about 20 minutes. Drain and rinse with cool water; chill.

Step 2When chilled, combine mayonnaise, sour cream, sugar, salt, pepper, and onion in a bowl. Stir in potatoes. Gently fold in bacon bits and cheese. Chill until serving time.
