I needed a quick dish to go with oven fried chicken - so it had to be potato salad! I had some cheese already grated, and some bacon already made into bits, so adding a little sour cream and onion gave me a very nice side dish.

potatoes, peeled and diced
1/2 c
olive oil mayonnaise (reduced fat)
1/3 c
low fat sour cream
1 Tbsp
salt and pepper to taste
1/4 c
finely chopped red onion
3 Tbsp
bacon bits
1/4 c
shredded cheddar cheese

How to Make Susan's Loaded Baked Potato Salad


  • 1Cook potatoes in boiling salted water about 20 minutes. Drain and rinse with cool water; chill.
  • 2When chilled, combine mayonnaise, sour cream, sugar, salt, pepper, and onion in a bowl. Stir in potatoes. Gently fold in bacon bits and cheese. Chill until serving time.
