Ingredients
- 4-6 medium potatoes
- 1/4 cup sour cream, fat-free
- 1/4 cup butter or margarine
- 1/4 cup bacon chips or bits
- 3/4 cup shredded cheddar cheese, divided to 1/4c and 1/2c
- 1/4 cup chives
How To Make loaded baked mashed potatoes

Step 1Preheat oven to 350.

Step 2Cut and boil potatoes till cooked. Drain off water.

Step 3Mash with electric hand mixer or masher.

Step 4Add sour cream, butter/margarine, bacon bits, 1/2c cheese, and chives.

Step 5Mix well, put in 2 qt. casserole dish. Spread 1/4c cheese and more bacon bits on top.

Step 6Bake for 10 mins or until cheese is melty.
