Served this with steaks on the grill tonight instead of "loaded baked" potatoes... Hubbster's Aunt popped in and gave it 2 thumbs up!

Ingredients

  • 4-6 medium potatoes
  • 1/4 cup sour cream, fat-free
  • 1/4 cup butter or margarine
  • 1/4 cup bacon chips or bits
  • 3/4 cup shredded cheddar cheese, divided to 1/4c and 1/2c
  • 1/4 cup chives

How To Make loaded baked mashed potatoes

  • Step 1
    Preheat oven to 350.
  • Step 2
    Cut and boil potatoes till cooked. Drain off water.
  • Step 3
    Mash with electric hand mixer or masher.
  • Step 4
    Add sour cream, butter/margarine, bacon bits, 1/2c cheese, and chives.
  • Step 5
    Mix well, put in 2 qt. casserole dish. Spread 1/4c cheese and more bacon bits on top.
  • Step 6
    Bake for 10 mins or until cheese is melty.
