- 5 pounds baby gold yukon potatoes
- 1 cup duke's or hellman's mayo
- 1/2 medium purple (red) onion, diced fine
- 1 medium lemon, the zest and juice
- 6 sprigs fresh baby dill, pulled apart from the stems

Step 1boil potatoes whole, then cool, then quarter into a large bowl. while potatoes are boiling...

Step 2mix the mayo, lemon juice, lemon zest, onion, and 1/2 of the dill. gently mix together all the ingredients with sea salt and fresh ground black pepper to your taste preferrence :)

Step 3sprinkle remaining dill on top of potato salad and enjoy!
