Given to me by my sister-in-law, Laura Gwaltney. Our family's Christmas wouldn't be the same without this delicious dish! Guaranteed to disappear quickly.

Ingredients

  • 3 cups mashed sweet potatoes (about 8 med. potatoes)
  • 1 teaspoon vanilla extract
  • 1 cup white sugar
  • 2 - eggs
  • 1/3 cup butter, melted
  • TOPPING:
  • 1 cup brown sugar
  • 1 cup coconut, shredded
  • 1 cup pecans, in pieces
  • 1/3 cup all purpose flour
  • 1/3 cup butter, cold

How To Make laura's sweet potato casserole

  • Step 1
    Bring a large pot of water to a boil; add sweet potatoes. Cook about 40 minutes or until done; drain and peel.
  • Step 2
    Mash with electric mixer until fairly smooth. Mix first five ingredients together and place into a 9x13-in. baking pan.
  • Step 3
    Mix topping ingredients together and cut in the butter.
  • Step 4
    Sprinkle on top of potatoes and bake at 350 degrees for 30 minutes.
  • Step 5
    Serve with turkey, ham, chicken, pork, whatever you like. Makes a wonderful holiday dish!

    My sister-in-law, Laura Lee Gwaltney, who shared this recipe with me. Every year at Christmas she makes this for our large family and there is never a spoonful left over.
