Ingredients

  • 3 c
    mashed sweet potatoes (about 8 med. potatoes)
  • 1 tsp
    vanilla extract
  • 1 c
    white sugar
  • 2
    eggs
  • 1/3 c
    butter, melted
  • TOPPING:

  • 1 c
    brown sugar
  • 1 c
    coconut, shredded
  • 1 c
    pecans, in pieces
  • 1/3 c
    all purpose flour
  • 1/3 c
    butter, cold

How to Make LAURA'S SWEET POTATO CASSEROLE

Step-by-Step

  1. Bring a large pot of water to a boil; add sweet potatoes. Cook about 40 minutes or until done; drain and peel.
  2. Mash with electric mixer until fairly smooth. Mix first five ingredients together and place into a 9x13-in. baking pan.
  3. Mix topping ingredients together and cut in the butter.
  4. Sprinkle on top of potatoes and bake at 350 degrees for 30 minutes.
  5. Serve with turkey, ham, chicken, pork, whatever you like. Makes a wonderful holiday dish!
  6. My sister-in-law, Laura Lee Gwaltney, who shared this recipe with me. Every year at Christmas she makes this for our large family and there is never a spoonful left over.
