Given to me by my sister-in-law, Laura Gwaltney. Our family's Christmas wouldn't be the same without this delicious dish! Guaranteed to disappear quickly.

Ingredients
- 3 cups mashed sweet potatoes (about 8 med. potatoes)
- 1 teaspoon vanilla extract
- 1 cup white sugar
- 2 - eggs
- 1/3 cup butter, melted
- TOPPING:
- 1 cup brown sugar
- 1 cup coconut, shredded
- 1 cup pecans, in pieces
- 1/3 cup all purpose flour
- 1/3 cup butter, cold
How To Make laura's sweet potato casserole

Step 1Bring a large pot of water to a boil; add sweet potatoes. Cook about 40 minutes or until done; drain and peel.

Step 2Mash with electric mixer until fairly smooth. Mix first five ingredients together and place into a 9x13-in. baking pan.

Step 3Mix topping ingredients together and cut in the butter.

Step 4Sprinkle on top of potatoes and bake at 350 degrees for 30 minutes.

Step 5Serve with turkey, ham, chicken, pork, whatever you like. Makes a wonderful holiday dish!

Step 6My sister-in-law, Laura Lee Gwaltney, who shared this recipe with me. Every year at Christmas she makes this for our large family and there is never a spoonful left over.
