I love changing it up with leftovers. What do you do with leftover roast beef? I cut it up and toss it in with boiled potatoes, red onions and peas

Ingredients

  • 1 - 2 tablespoons cooking oil (just enough for bottom of pan)
  • 4 cups boiled potatoes skins on cut up
  • 1 - 1/2 cups leftover beef (or pork) cut into small pieces
  • 1 - 1/2 cups red onion, sliced thin
  • 1 - 1/2 cups frozen baby peas
  • - salt & pepper
  • SPECIAL SAUCE FOR PORK VERSION
  • 2 dashes ginger
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon soy sauce
  • 2 dashes garlic powder
  • 1 teaspoon brown sugar
  • 1 teaspoon red wine vinegar
  • 1 teaspoon coconut oil
  • 1 teaspoon water

How To Make kitty's leftover meat & potatoes, red onions & peas

  • Step 1
    Heat oil in skillet then add potatoes when they sizzle
  • Step 2
    Fry potatoes till golden brown
  • Step 3
    Season with salt and pepper
  • Step 4
    Add meat and warm through
  • Step 5
    Add onions till slightly tender
  • Step 6
    Add frozen peas and stir gently
  • Step 7
    When peas are heated through, remove from stove and serve
  • Step 8
    TO MAKE THIS DISH FRESH FROM SCRATCH BROWN MEAT IN HOT OIL, ADD SAUCE, MIX WELL, THEN SET ASIDE FOIL COVERED. FRY POTATOES IN HOT COCONUT OIL WITH PAPRIKA, SALT AND PEPPER THEN COMBINE MEAT, ONIONS, AND PEAS.
