kitkat's potatoe mac salad

When I worked my frist job as a kitchen help I learned how to make this salad. And over the years I have worked on it & added other ingredients. This is local favorite here in Hawaii. It is a family favorite at all of our family parties.

Ingredients

  • 6 - 7 large potatoes, boiled, skined & cubed
  • 4 - hard boiled eggs, cubed
  • 1 small onions, diced
  • 1 medium celery stalk, ckeaned & sliced
  • 1 small carrot, grated
  • 1/3 teaspoon salt and pepper
  • 1- 1 1/2 cups mayonnaise
  • 1 cup elbow macaroni, cooked & drained

How To Make kitkat's potatoe mac salad

  • Step 1
    Frist wash & boil the potatoes in a large bowl. When cool enough to touch peel off the skin & set aside in a large bowl. Then in a medium pot boil the eggs,let cool, peel & set aside in a small bowl. Then boil the macaroni as directed on box & set aside.
  • Step 2
    Next in the bowl with the potatoes cube each one into buite side pieces. Then cube the hard boil eggs into smaller bite side pieces & pour over the potatoes.
  • Step 3
    Next add in the chopped onions, sliced celery & cooled macaroni to the bowl & softly mix.
  • Step 4
    Then add in the mayo, pepper & fold over to coat carefully. Add in the salt to taste.
  • Step 5
    Then pour into a big clean serving bowl or keep in the same bowl. Keep on ice or in the ice box.
  • Step 6
    Special Tip: Will keep fresh in the ice box for up to a week. But never last that long in my house with my family.
