kim's loaded potato bake

My husband and I love to cook together. Today he is making London broil, and I am making the side dishes. I wanted a twist on a loaded baked potato, and this is what I came up with. It turned out really good, so I thought I would share it. Of course, you can always adjust the seasonings to your taste.

Ingredients

  • 6 large potatoes
  • 8 slices of cooked bacon, chopped into small pieces
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 cups cheddar cheese, shredded
  • 1 cup green onion, chopped
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 cup sour cream

How To Make kim's loaded potato bake

  • Step 1
    Rinse potatoes. Cut into thin bite sized slices leaving on the skins
  • Step 2
    Boil potatoes in a pot of water until soft but not mushy.
  • Step 3
    Drain water.
  • Step 4
    Put potatoes in a bowl with olive oil, onion powder, paprika and salt. Toss potatoes until evenly coated.
  • Step 5
    In a single layer spread in baking pan. I used an 11 x 13 pan.
  • Ready to go in the oven
    Step 6
    Sprinkle bacon and cheese evenly over the potatoes.
  • Just out of the oven
    Step 7
    Bake at 425 degrees until cheese is melted. Approximately 10 minutes.
  • Step 8
    Remove from oven and top with green onions and sour cream to your preference.
