kim's loaded potato bake
My husband and I love to cook together. Today he is making London broil, and I am making the side dishes. I wanted a twist on a loaded baked potato, and this is what I came up with. It turned out really good, so I thought I would share it. Of course, you can always adjust the seasonings to your taste.

Ingredients
- 6 large potatoes
- 8 slices of cooked bacon, chopped into small pieces
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 cups cheddar cheese, shredded
- 1 cup green onion, chopped
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1 cup sour cream
How To Make kim's loaded potato bake

Step 1Rinse potatoes. Cut into thin bite sized slices leaving on the skins

Step 2Boil potatoes in a pot of water until soft but not mushy.

Step 3Drain water.

Step 4Put potatoes in a bowl with olive oil, onion powder, paprika and salt. Toss potatoes until evenly coated.

Step 5In a single layer spread in baking pan. I used an 11 x 13 pan.

Step 6Sprinkle bacon and cheese evenly over the potatoes.

Step 7Bake at 425 degrees until cheese is melted. Approximately 10 minutes.

Step 8Remove from oven and top with green onions and sour cream to your preference.
