I made a breakfast casserole for Christmas Eve and I had sausage and bacon left over so I decided to create a different twist to twice baked potatoes. Turned out delicious with lots of flavor and cheesy too!!

baking potatoes or 4 lg
1/4 c
1/4 c
sour cream
1 c
shredded cheddar cheese
1/3 c
parmesan cheese
1 1/2 c
cooked bulk sausage
5 slice
cooked bacon-crisp
1/2 c
pepper, garlic powder & dried onions (per your taste)

How to Make Kimi's Bacon-Sausage Twice Baked Potatoes


  • 1In a 350F oven bake potatoes till done; about 1 hr. Remove and let cool to touch. Peel & cut into large chunks while still hot and place in mixer.
  • 2Meanwhile cook bacon & sausage. Add in cooked bacon & sausage to potato mixture and then all other ingredients. Mix till smooth; leaving some cheese for the top of casserole.
  • 3Bake at 350F for 30 minutes.
