We love food in our house and we love to eat. My sons started choosing recipes to cook on Sundays. Kevin, my oldest, chose this recipe and it became a family favorite. Think scalloped potatoes meets loaded fries. Perfect for having the gang over on Sunday to watch football or hockey. Enjoy.

Ingredients For kevin's cheesy potatoes

  • 5 lg
    potatoes
  • 2 c
    whipping cream or half and half
  • salt and pepper
  • 2 tsp
    parsely flakes
  • 2 c
    shredded cheddar cheese
  • 1/2 c
    parmesan cheese
  • crumbled bacon or bacon bits

How To Make kevin's cheesy potatoes

    Peel potatoes. Slice into shoestring fries. Place in a 9 x 13 pan. **I also used 2 bags of frozen shoestring fries as an alternative to potatoes. Enough to fill the baking pan. Makes the recipe even easier. Season with salt and pepper and any other spices you like.

    Pour cream or half and half over the potatoes.

    Top with grated cheese and parmesan. Sprinkle with parsely.

    Because they are bacon lovers in this house, they wanted to top it with bacon. We've used real bacon, crumbled and real bacon bits. The bacon bits, again, make this recipe so easy to put together.

    Cook for 60-90 minutes at 400 degrees until crispy and the cheese is melted. For the last 30 minutes, you can move pan to the bottom of oven to make the bottom even crispier.
