Ingredients
- 3.5 pounds canned, vacuum packed sweet potatoes
- 1 cup sugar
- 1/3 cup bourbon
- 1/2 cup butter
- 1/2 teaspoon vanilla extract
- 2 cups mini marshmallows

Step 1Fresh sweet potatoes, cooked until soft and then peeled, can be substituted for the vacuum packed ones.

Step 2Don\'t use drained, canned in syrup as they are too moist.

Step 3Preheat oven to 350.

Step 4Put sweet potatoes in a large heavy saucepan and cook over medium heat, stirring frequently, until heated through.

Step 5Mash sweet potatoes.

Step 6Add sugar, bourbon, butter and vanilla; beat until well blended.

Step 7Turn into a 2-quart, shallow baking dish.

Step 8Sprinkle marshmallows over top.

Step 9Bake, uncovered, 30 minutes, or until marshmallows are golden.
