  • 3.5 pounds canned, vacuum packed sweet potatoes
  • 1 cup sugar
  • 1/3 cup bourbon
  • 1/2 cup butter
  • 1/2 teaspoon vanilla extract
  • 2 cups mini marshmallows

  • Step 1
    Fresh sweet potatoes, cooked until soft and then peeled, can be substituted for the vacuum packed ones.
  • Step 2
    Don\'t use drained, canned in syrup as they are too moist.
  • Step 3
    Preheat oven to 350.
  • Step 4
    Put sweet potatoes in a large heavy saucepan and cook over medium heat, stirring frequently, until heated through.
  • Step 5
    Mash sweet potatoes.
  • Step 6
    Add sugar, bourbon, butter and vanilla; beat until well blended.
  • Step 7
    Turn into a 2-quart, shallow baking dish.
  • Step 8
    Sprinkle marshmallows over top.
  • Step 9
    Bake, uncovered, 30 minutes, or until marshmallows are golden.
