Ingredients
- 2 pounds sweet potatoes
- 1/4 cup butter
- 1 cup sugar
- 3 eggs
- 3/4 cup evaporated milk
- 2 teaspoons vanilla
- 2 teaspoons nutmeg (optional)
- 2 teaspoons cinnamon (optional)
How To Make joan's sweet potato pudding

Step 1Boil potatoes till tender. Peel. Add butter while potatoes are hot. Mash potatoes till smooth.

Step 2Fold in sugar. Stir till well mixed. Add eggs, one at a time and beat into mixture well till all eggs have been added. Stir in milk, vanilla and spices.

Step 3Pour into greased 2 quart casserole. Bake at 375 degrees for 30 minutes. Top with marshmallows and bake for 10 to 15 minutes more.
