Ingredients
- 2 cans cut yams in light syrup, 16 ounces each
- 1 can chunk pineapple in natural juice (20 ounces)
- 3 kiwis
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 tablespoon corn starch
How To Make jim's sweet-sour yams

Step 1Drain liquid from pineapple chunks and sweet potatoes into 2-quart microwavable pan.

Step 2Peel kiwi fruit, cut into quarters, length-wise, and slice thinly.

Step 3Cut pineapple chunks into quarters.

Step 4Add brown sugar and corn starch to liquid in pan; mix well.

Step 5Add butter and raisins.

Step 6Microwave at 60% for 3 minutes, or until butter is melted; mix well.

Step 7Add pineapple and kiwi fruit.

Step 8Microwave at 80% for 5 minutes.

Step 9Mix well.

Step 10Microwave at 80% for 5 minutes more, or until sauce begins to thicken.

Step 11Add sweet potatoes.

Step 12Mix well, but gently, so as not to break up potatoes.

Step 13Microwave at 80% for 5 minutes.

Step 14Let stand 3 minutes; stir before serving.
