Ingredients

  • 2 cans cut yams in light syrup, 16 ounces each
  • 1 can chunk pineapple in natural juice (20 ounces)
  • 3 kiwis
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 tablespoon corn starch

How To Make jim's sweet-sour yams

  • Step 1
    Drain liquid from pineapple chunks and sweet potatoes into 2-quart microwavable pan.
  • Step 2
    Peel kiwi fruit, cut into quarters, length-wise, and slice thinly.
  • Step 3
    Cut pineapple chunks into quarters.
  • Step 4
    Add brown sugar and corn starch to liquid in pan; mix well.
  • Step 5
    Add butter and raisins.
  • Step 6
    Microwave at 60% for 3 minutes, or until butter is melted; mix well.
  • Step 7
    Add pineapple and kiwi fruit.
  • Step 8
    Microwave at 80% for 5 minutes.
  • Step 9
    Mix well.
  • Step 10
    Microwave at 80% for 5 minutes more, or until sauce begins to thicken.
  • Step 11
    Add sweet potatoes.
  • Step 12
    Mix well, but gently, so as not to break up potatoes.
  • Step 13
    Microwave at 80% for 5 minutes.
  • Step 14
    Let stand 3 minutes; stir before serving.
