jeanne's mustard potato salad
I have tweaked my Mom's recipe a little but this is basically the potato salad that I grew up with. It is my favorite of all of the types of potato salad.

Ingredients
- 6 or 7 - medium potatoes, peeled, cut into 1 1/2 inch cubes
- 2 tablespoons butter
- 3 or 4 - hard-boiled eggs
- 1/2 cup celery, diced
- 1 - small onion, finely chopped
- 1 cup bell pepper, diced
- 3 tablespoons dill pickle relish
- 1/2 cup miracle whip salad dressing
- 3 tablespoons honey mustard
- - salt and pepper to taste
How To Make jeanne's mustard potato salad

Step 1Rinse potatoes and place in sauce pan and cover with water.

Step 2Boil for 20 – 30 minutes or until tender.

Step 3Drain and put into a large bowl.

Step 4Add butter and mash potatoes until smooth.

Step 5Add celery, onion, bell peppers and pickle relish. Stir until well combined.

Step 6Add salad dressing, honey mustard. Blend well.

Step 7Add salt and pepper to taste.

Step 8This can be served warm but it is really best if it is chilled for a couple of hours before serving.
