These potatoes are a great change from the everyday-ordinary we are all used to, yet they are simple to prepare. It was inspired by my son (for whom this recipe is named) when he came to visit for a week. He had seen a recipe on TV and tried to duplicate it. It was good, but didn't have enough spices. I have tweaked this several times (including adding the onion powder), to get it just the way we like it.

3 Tbsp
olive oil
1/2 Tbsp
dried thyme leaves (or more to taste)
1 Tbsp
garlic power (or more to taste)
1/2 Tbsp
onion powder (or more to taste)
salt and pepper, to taste

How to Make JASON'S POTATOES (Thyme, Garlic, Onion)


  • 1Thoroughly wash the Potatoes (you can peel them, or leave the skins on if you prefer).
  • 2Cut Potatoes into approximately 1" cubes and place in a bowl or Ziploc bag.
  • 3Add Oil and other spices, and mix/shake well.
  • 4Refrigerate for at least 1 hour.
  • 5Preheat oven to 375 degrees.
  • 6Grease bottom of sheet pan with Olive Oil and heat pan in oven for approximately 3-4 minutes (this helps to keep the Potatoes from sticking during baking).
  • 7Spread Potatoes into heated pan and bake for 45 minutes or until done), turning Potatoes at least once during baking.
