jan's turkey & stuffing casserole

Had leftover turkey & stuffing from Thanksgiving, wanted to make something to use it up & not have several dishes...so I used the same idea that KFC does with their chicken & mashed potato bowls... This was easy, everything is already cooked so you just have to bake it long enough to warm it through... Looks kind of sloppy on the plate, but tasted amazing! And NOT for anyone on a diet!

Ingredients

  • 4 cups mashed potatoes
  • 3 cups cooked turkey, shredded or diced
  • 1 can whole kernel corn, rinse & drain
  • 3-4 cups homemade stuffing (loose)
  • 3 cups turkey or chicken gravy

How To Make jan's turkey & stuffing casserole

  • Step 1
    Either use leftover mashed potatoes, or make fresh (I made fresh). In 1-1/2 qt. casserole, put enough gravy to just cover the bottom. Layer about 1/2 of the mashed potatoes; then a layer of the shredded turkey; top with the drained corn.
  • Step 2
    Top with enough gravy to just cover thinly; put a layer of the stuffing. Add remaining potatoes, spread to cover; remainder of turkey, then top with rest of stuffing. Pour remaining gravy over all, just drizzle it so it's not completely covered.
  • Step 3
    Bake at 350°F for about 30-45 minutes, just until heated through and stuffing is a little dry.
  • Step 4
    Serve on plate and enjoy! It's NOT diet food, and if you're watching your carb intake, this is NOT one you'd want to have! Comfort food at its finest...:)
