It's grilling time again, and I like to have most of my food prepared outside on the grill. I love the flavor of food cooked over charcoal. This is my favorite way to make a side dish of my new red potatoes. Serve with your favorite BBQ meal. Tonight, I was in the mood for an old-fashioned plain cheeseburger. I served these potatoes with a side of stewed squash out of the garden today.

Jamie's grilled hobo potatoes are a twist on the camping favorite side dish that's usually made in a foil pouch. These are prepared in a cast iron skillet over charcoal briquettes. Once cooked, the sliced potatoes are tender with crispy edges. They absorb the flavors from the smoky bacon and the sweet Vidalia onion. This recipe makes a full cast iron, so it's a great barbecue side dish. It will be delicious during summer grilling season alongside hamburgers, steaks, or grilled chicken.
