Ingredients
- 4 cups leftover mashed potatoes
- 2/3 cup plus 2 teaspoons all-purpose flour
- 4 tablespoons whole milk
- 2 teaspoons each fresh parsley and chives, chopped
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
- 3 tablespoons unsalted butter
How To Make irish potato cakes

Step 1In a large bowl, combine the mashed potatoes, 2/3 cup of the flour, whole milk, herbs and salt and pepper to taste. Mix well. Knead the mixture for about 15 seconds

Step 2Sprinkle the remaining flour on the work surface and turn the potato mixture onto the work surface.

Step 3Divide the potato mixture into 8 balls and press gently into a 3" round.

Step 4Heat the butter in a nonstick saute pan and saute each potato cake until a lovely golden brown. You may need to add more butter.

Step 5Serve very hot.
