Ingredients

4 c
leftover mashed potatoes
2/3 c
plus 2 teaspoons all-purpose flour
4 Tbsp
whole milk
2 tsp
each fresh parsley and chives, chopped
1 tsp
salt
1 tsp
coarsely ground black pepper
3 Tbsp
unsalted butter

How to Make IRISH POTATO CAKES

Step-by-Step

  • 1In a large bowl, combine the mashed potatoes, 2/3 cup of the flour, whole milk, herbs and salt and pepper to taste. Mix well. Knead the mixture for about 15 seconds
  • 2Sprinkle the remaining flour on the work surface and turn the potato mixture onto the work surface.
  • 3Divide the potato mixture into 8 balls and press gently into a 3" round.
  • 4Heat the butter in a nonstick saute pan and saute each potato cake until a lovely golden brown. You may need to add more butter.
  • 5Serve very hot.
