Instant Pot Mashed Sweet Potatoes
·2 – 3 medium sweet potatoes cut into 1” chunks
·1 cup cold water
·2 tbsp. pure maple syrup
·2 - 3 tbsp. butter, plus a bit more for serving
·1/4 tsp. nutmeg
·1/2 tsp. cinnamon
·course salt to taste
How to Make Instant Pot Mashed Sweet Potatoes
- Peel and cut sweet potatoes into 1” chunks.
- Pour 1 cup water into the Instant Pot and insert a steamer basket. Place sweet potato chunks into the basket. Close lid and cook at High Pressure for 10 minutes. Turn off the heat and carefully do a quick release. Open the lid. Test potatoes with a fork or point of a sharp knife. If you feel any resistance, replace lid and set to cook another 3 minutes. Again, do a quick release as before.
- Place the cooked sweet potatoes in a large bowl. Use a potato masher to partially mash the potatoes. Add nutmeg, cinnamon, butter, and maple syrup to the sweet potatoes. Mash and mix the sweet potatoes into desired consistency. Taste and season with a pinch of fine sea salt. Serve with another pat of butter on each serving.
- Don't want that much butter - just leave it out...suit yourself. :-)
