Ingredients
- 1.5 cups broccoli, fresh flowerets
- 1/2 cup mushrooms, sliced
- 1/4 cup green onion, sliced
- 1/4 cup red bell pepper, chopped
- 1 cup turkey, cooked and diced
- 4 large potatoes, baked
- 1/2 cup yogurt, plain and non-fat
- 1/4 cup milk, skim
- 2 teaspoons cornstarch
- 1 teaspoon dijon mustard
- pinch nutmeg, ground
- 2 tablespoons parmesan cheese, grated

Step 1In a l-quart microwave-safe casserole combine broccoli, mushrooms, green onion, red pepper and 2 tablespoons water.

Step 2Micro-cook covered, on 100% power (high) 3 to 5 minutes or until vegetables are tender; drain well.

Step 3Add turkey (or ham will work too); cook, covered, on high 2 to 3 minutes or until heated through.

Step 4Stir together yogurt, milk, cornstarch, mustard and nutmeg; add to broccoli mixture.

Step 5Cook, covered, on high 2 to 4 minutes or until mixture is thickened, stirring every 30 seconds.

Step 6Spoon over hot baked potatoes; sprinkle with Parmesan cheese.
