Ingredients
- VINAIGRETTE
- 1/2 cup white wine vinegar
- 1 tablespoon coarse grained mustard
- 1 tablespoon sugar
- 2 dashes black pepper
- 2 dashes garlic salt
- OTHER INGREDIENTS
- 2 1/2 pounds red potatoes diced
- 3 dashes salt
- 1 medium red onion diced
- 6 slices bacon
How To Make hot potato salad w/bacon

Step 1Mix all vinaigrette ingredients together in a small bowl and set aside

Step 2Add potatoes to pot of salted cold water. Bring to a boil over high heat, then reduce heat to a simmer and cook for 20 minutes or until tender. Drain and place in a large bowl, cover with foil to keep warm.

Step 3Add bacon to a saute pan and cook until crisp over medium heat. Remove bacon from pan, add red onion, 2 dashes of pepper and garlic salt to bacon grease and saute for 3 minutes.

Step 4Add vinaigrette to the onion and bacon grease mixture, let cook until reduced and thickened, 2 to 3 minutes. Pour over potatoes and toss gently. Enjoy!
