Left over bake potatoes works great. I bake the potatoes in the crock pot and keep in the fridge when I need them.
I sometimes use my favorite creole seasoning

  • 1 medium
    baked potatoe, cubed
  • 1-2 Tbsp
    bacon drippings, or olive oil
  • ·
    bell pepper, cut into strips
  • ·
    onion, sliced
  • 1 tsp
  • 1 tsp
    garlic powder
  • 1 tsp
  • 1 1/2 tsp
    smoked paprika
  • 1/8 tsp
    cayenne pepper
  • ·
    salt and pepper

How to Make Home Fries Bake Potato Style


  1. In a bowl combine, potatoes, onion, bell peppers.
    Add the spices and mix to evenly coat.
  2. Heat bacon drippings or olive oil over medium heat in a cast iron skillet. When hot add the potatoe mixture and brown for 2-3 minutes or until potatoes are crisp. Salt and Pepper and turn the potatoes over and cook until browned and crisp.
  3. Serve with a poached egg or your favorite style. top potatoes with a little sour cream and salsa.
