Left over bake potatoes works great. I bake the potatoes in the crock pot and keep in the fridge when I need them. I sometimes use my favorite creole seasoning

Ingredients
- 1 medium baked potatoe, cubed
- 1-2 tablespoon bacon drippings, or olive oil
- - bell pepper, cut into strips
- - onion, sliced
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon coriander
- 1 1/2 teaspoons smoked paprika
- 1/8 teaspoon cayenne pepper
- - salt and pepper
How To Make home fries bake potato style

Step 1In a bowl combine, potatoes, onion, bell peppers. Add the spices and mix to evenly coat.

Step 2Heat bacon drippings or olive oil over medium heat in a cast iron skillet. When hot add the potatoe mixture and brown for 2-3 minutes or until potatoes are crisp. Salt and Pepper and turn the potatoes over and cook until browned and crisp.

Step 3Serve with a poached egg or your favorite style. top potatoes with a little sour cream and salsa.
