holiday mashed potatoes
I've been making this recipe for over 30 years and Everyone loves these mashed potatoes. I love being able to make the day before a holiday and just popping in the oven.

Ingredients
- 12 medium potatoes, peeled, cooked & hot
- 8 ounces cream cheese softened
- 1/4 cup butter/margarine
- 1/2 cup sour cream
- 1/2 cup milk
- 2 - eggs, lightly beaten
- 1/4 cup minced onion, optional
How To Make holiday mashed potatoes

Step 1Mash hot potatoes. Add cream cheese in small pieces and then butter. Beat well until melted and completely mixed in.

Step 2Mix in sour cream.

Step 3To the milk add the eggs and onion. Add to the potato mixture along with salt and pepper. Beat well until light and fluffy.

Step 4Place in a greased casserole and refrigerate overnight or several hours.

Step 5Bake at 350 degrees for 45 minutes until lightly browned on top.
