  • 4
    potatoes, scrubbed and cut into eighths lengthwise
  • 1/2 c
  • 4 oz
    parmesan cheese
  • ·
    freshly ground black pepper to taste
  • 1/2 tsp
    rosemary, dried
  • 1/2 tsp
    parsley flakes
  • 1/2 tsp
    thyme, dried
  • ·
    kosher salt to taste
  • 2 Tbsp
    snipped chives
  • 1 c
    sour cream

How to Make Herbed Potato Wedges


  1. Preheat oven to 350-degrees.
    Melt butter in a large, shallow baking dish while oven is heating.
  2. Arrange potatoes in a single layer over the butter. Sprinkle with cheese and herbs and seasonings.
  3. Bake for 30 minutes. Remove from oven and baste with butter. Return to oven and bake until tender (about 20-30 minutes longer).
  4. Mix sour cream and chives. Serve on the side.
