Herbed Potato Wedges
4potatoes, scrubbed and cut into eighths lengthwise
4 ozparmesan cheese
·freshly ground black pepper to taste
1/2 tsprosemary, dried
1/2 tspparsley flakes
1/2 tspthyme, dried
·kosher salt to taste
2 Tbspsnipped chives
1 csour cream
How to Make Herbed Potato Wedges
- Preheat oven to 350-degrees.
Melt butter in a large, shallow baking dish while oven is heating.
- Arrange potatoes in a single layer over the butter. Sprinkle with cheese and herbs and seasonings.
- Bake for 30 minutes. Remove from oven and baste with butter. Return to oven and bake until tender (about 20-30 minutes longer).
- Mix sour cream and chives. Serve on the side.
