Nice for a change up from baked potatoes and so easy to make.

Ingredients

  • 4 - potatoes, scrubbed and cut into eighths lengthwise
  • 1/2 cup butter
  • 4 ounces parmesan cheese
  • - freshly ground black pepper to taste
  • 1/2 teaspoon rosemary, dried
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon thyme, dried
  • - kosher salt to taste
  • 2 tablespoons snipped chives
  • 1 cup sour cream

How To Make herbed potato wedges

  • Step 1
    Preheat oven to 350-degrees. Melt butter in a large, shallow baking dish while oven is heating.
  • Step 2
    Arrange potatoes in a single layer over the butter. Sprinkle with cheese and herbs and seasonings.
  • Step 3
    Bake for 30 minutes. Remove from oven and baste with butter. Return to oven and bake until tender (about 20-30 minutes longer).
  • Step 4
    Mix sour cream and chives. Serve on the side.
