I love potatoes and who doesn't love them scalloped. These remind me of when I was a kid, just love them!

Ingredients

  • 2 tablespoons vegan margarine
  • 1 tablespoon white spelt flour
  • 1 1/2 cups plain coffee creamer
  • - salt and pepper to taste
  • 4-6 large yukon gold potatoes
  • 1 large sweet onion
  • - bread crumbs, buttered
  • - melted vegan margarine

How To Make heavenly scalloped potatoes

  • Step 1
    Preheat the oven to 350'F.
  • Step 2
    Melt the Vegan margarine in a sauce pan over medium heat.
  • Step 3
    Stir in the flour. Let it cook for a minute to get rid of the flour taste.
  • Step 4
    Add the soy creamer slowly and stir until thickened. Add the salt and pepper to taste.
  • Step 5
    Spray or grease a baking dish.
  • Step 6
    Using a mandolin, slice the potatoes and onions very thin.
  • Step 7
    Alternate layers of potato and onions.
  • Step 8
    Pour the white sauce over everything.
  • Step 9
    Sprinkle the top with bread crumbs. You can use plain or seasoned ones for something different.
  • Step 10
    Sprinkle some melted vegan margarine over the crumbs.
  • Step 11
    Bake covered for 1 hour.
  • Step 12
    Uncover and bake for 15 minutes more to brown the crumbs. Serve hot.
