My mother made this occasionally for company and it was great served with eggs or any other entree.

Ingredients

1/2 c
melted margarine or butter
1/2 c
chopped onion
1 can(s)
cream of chicken soup, undiluted
1 tsp
salt
1/2 tsp
pepper
2 c
grated colby cheese
1
2 lb. bag frozen hash brown potatoes, thawed slightly and broken up with a fork

Step-By-Step

1Preheat oven to 350 degrees. Spray a 9x13 casserole dish with cooking spray. In a bowl, combine soup, melted margarine (or butter), salt, pepper, onions, and cheese.
2Gently mix in the potatoes and pour all into prepared dish. Bake for 30-35 minutes.
