Ingredients
- 8 medium russet potatoes
- 1 cup sharp cheddar cheese shredded
- 8 ounces cream cheese softened
- 1/2 cup green onion chopped
- 1 teaspoon salt
How To Make grilled potato volcanoes

Step 1Preheat oven at 350 degrees. Prick the potatoes with a fork. Wrap the potatoes individually with foil. Place in oven and bake for 1 hour.

Step 2Let the potatoes cool. Meanwhile mix the cream cheese, salt, cheddar cheese and green onions together. set aside.

Step 3Cut the ends off the potatoes so they can stand up. Using a melon baller or spoon and scoop out the potatoes from the center not letting the walls be to thin and leaving a bit on the bottom. Fill the potatoes with the cream cheese mixture.

Step 4Place the potatoes on a grill over indirect heat. Grill for 30 minutes. Serve with sour cream if desired.
