Ingredients

  • 2 large baking potatoes (about 12 oz each)
  • 4 slices bacon, diced
  • 2 tablespoons olive oil, extra virgin
  • - kosher salt & pepper, to taste
  • 1/2 cup sour cream, fat-free
  • 3 tablespoons chives, bunch, fresh
  • 1/2 stick butter, unsalted

How To Make grilled potato steaks w/sour cream, bacon & chives

  • Step 1
    Prepare grill or grill pan for direct heat cooking over medium heat. Trim thin slices off long sides of each potato so they lie flat. Cut each potato in half lengthwise to make 2 steaks, each about 1" - 1 1/2" thick.
  • Step 2
    Bring large pot of salted water to boil over high heat; reduce heat to simmer. Cook potatoes in simmering water until just done but still very firm, 10 - 15 minutes. Drain potatoes; pat dry with paper towels.
  • Step 3
    Cook bacon in skillet over medium heat until crisp, 6 - 8 minutes. Drain on paper towels. Brush potatoes steaks with oil; sprinkle generously with salt & pepper. Transfer to grill; cook, turning once, until crispy & brown, 4 - 5 minutes per side. Arrange potatoes on platter; top with sour cream, chives & butter. Crumble bacon & sprinkle over potatoes.
