Ingredients

  • 3 medium russet potatoes
  • - **2 % cheddar cheese, grated
  • - **bacon, low sodium or turkey, cooked and crumbled
  • - **pico de gallo
  • - **olive oil
  • - **my house seasoning

How To Make grilled potato stacks

  • Step 1
    Scrub potatoes well. Slice about 1/2" thick long ways. Rub each slice well with olive oil on both sides, sprinkle with favor seasonings.

    Grill for about 20-30 min. turning once.

  • Step 4
    Top first slice with grated cheese and crumbled bacon, stack another potato slice and top with cheese and pico de gallo. Third slice top with cheese and bacon again, and finish off with another slice of potato, bacon and pico de gallo. Pop in microwave just long enough to melt cheese.
