grilled potato salad

Quick and easy side. I make this for all my cookouts but I rarely get to actually eat any it goes so fast! Everyone asks for this recipe!

Ingredients

  • 4-5 pounds favorite potatoes sliced (i do not remove skins)
  • 1/2 to 1 pounds bacon cooked and crumbled (i cook extra and freeze it for later use)
  • 1/4 to 1/2 cup diced onion
  • 4-5 tablespoons butter
  • 2 cups shredded cheese (i use a mix of swiss and cheddar)
  • - cooking spray
  • - salt, pepper, garlic powder etc. to taste
  • - optional: sliced jalepeno peppers (i have used fresh and jarred)

How To Make grilled potato salad

  • Step 1
    Spray 2 large sheets of heavy duty aluminum foil with cooking spray
  • Step 2
    Layer sliced potatoes, onion, seasonings on one sheet of aluminum foil
  • Step 3
    Top with bacon, peppers, cheese then pats of butter (in that order works best)
  • Step 4
    cover with second sheet of sprayed aluminum foil and seal edges well
  • Step 5
    cook on medium grill 35 minutes.
  • Step 6
    I often split this into 2 batches; one with peppers and one without. This is definitely a crowd pleaser!
