I enjoyed these potatoes when going on camping trips as a child. As I got older, I continued to make these potatoes the same way my friend's mom prepared them. Later on, I added my own twist with Philly Cream Cheese and Chives.

Ingredients

  • 4 large potatoes, sliced
  • 1/2 small onion
  • 1/2 stick butter, softened
  • 3 tablespoons philadelphia cream cheese and chives
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How To Make grilled pocket potatoes

  • Step 1
Peel and slice 4 large potatoes, rinse and place in medium bowl. Peel and slice 1/2 onion and add to potatoes. In separate bowl, cream together butter and Philly Cream Cheese and Chives. Add salt and pepper.
  • Step 2
Add butter mixture to potatoes and mix to coat the potatoes and onions. Place mixture on large sheet of aluminum foil. Fold over foil, roll and pinch edges of foil to form a sealed pocket. Use fork to poke holes on top of the pouch. Place on medium grill for 40 minutes until potates are cooked.
