This is a recipe the roughnecks on the oil rigs make. It is designed to make ahead and put on the manifold to cook while working. The grill or oven also do the job!

Ingredients

potatoes, i like a variety of red and idaho
1
zucchini
1
sweet potato
1
yellow squash
1
carrot
1
onion
1/2
red bell pepper
1
celery stalk
1/4 c
butter
4 oz
velveeta cheese
4 slice
bacon, crisply fried
salt
pepper
garlic powder
parsley

How to Make grill/ rig potatoes

Step-by-Step

  • 1Lay out two sheets of foil, about 18 inches long, one on top of the other. Spray with Pam or use butter to prevent sticking. Slice all vegetables onto foil. Sprinkle with salt, pepper, garlic powder, and parsley. Top with slices of Velveeta Cheese. Dot with butter. Top with crisply fried bacon. Bring foil over the top and seal. Place on the cool side of the grill, preheated to 400 degrees. Poke a few holes in the top and close grill.Cook for about an hour, til vegetables are tender. This can also be done in the oven at 375 for about 1 hour. Remove with potholders to a cookie sheet and carefully open foil. Serve out of foil. No dirty pan! Enjoy
