My husbands Mother used to make these every wash-day when he was growing up and he loved them. He called them "Tater Dumplins"... She taught me how to make them for him too and he still loved them, so I guess they were good enough for him, lol... Rest In Peace my love! ?

Ingredients
- 4 medium potatoes, peeled & diced
- 1/2 stick butter
- 3 cups milk
- 2 teaspoons salt
- 1 teaspoon dried parsley
- 1 can diced tomatoes
- DUMPLINGS:
- 3 cups flour
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon salt

Step 1Boil potatoes in water until tender. Do not drain, but add milk, butter, salt, and dried parsley. Bring back to simmer...

Step 2Mix 3 cups flour, 2 eggs, 1/2 cup milk and 1 tsp. salt and mix well until you get a dough. Roll out on a floured table.. Cut and drop in hot milk and potato mixutre and cook at a low simmer, until dumplings are tender. Stir occasionally to keep dumplings from sticking together.

Step 3When the dumplings are tender(done), add the can of diced tomatoes and heat throughly. I've made this with and without the tomatoes, but prefer it with them. Serve in large bowls as this is a good and filling meatless meal.
