You can never go wrong with gorgonzola, blue cheese and bacon!!

Ingredients

  • 4 large baking potatoes
  • 4 slices bacon
  • 2/3 cup milk
  • 2 tablespoons butter
  • 1/2 cup crumbled gorgonzola
  • 4 medium green onions, sliced
  • 1/2 teaspoon salt and pepper

How To Make gorgonzola twice-baked potatoes with bacon

  • Step 1
    Heat oven to 375. Clean potatoes, but do not peel. Pierce with fork. Place on rack and bake for 1 hour 15 minutes. Let stand until cool enough to handle.
  • Step 2
    Cook bacon over medium heat 5-6 minutes, turning occasionally, until crisp.
  • Step 3
    Cut each potato lengthwise and scoop out inside. Leaving a thin shell. Mash potatoes, milk and butter until no lumps. Sir in cheese, green onions and salt and pepper. Fill potato shells with mashed mixture, place on un-greased cookie sheet. Crumble bacon onto potatoes.
  • Step 4
    Bake 20 miutes or until hot.
