Ingredients

4 large
baking potatoes
4 slice
bacon
2/3 c
milk
2 Tbsp
butter
1/2 c
crumbled gorgonzola
4 medium
green onions, sliced
1/2 tsp
salt and pepper

How to Make Gorgonzola Twice-Baked Potatoes with Bacon

Step-by-Step

  • 1Heat oven to 375. Clean potatoes, but do not peel. Pierce with fork. Place on rack and bake for 1 hour 15 minutes. Let stand until cool enough to handle.
  • 2Cook bacon over medium heat 5-6 minutes, turning occasionally, until crisp.
  • 3Cut each potato lengthwise and scoop out inside. Leaving a thin shell. Mash potatoes, milk and butter until no lumps. Sir in cheese, green onions and salt and pepper. Fill potato shells with mashed mixture, place on un-greased cookie sheet. Crumble bacon onto potatoes.
  • 4Bake 20 miutes or until hot.
