  • 2 c
    leftover mashed potatoes
  • 1/2 - 1 c
    fat - free sour cream
  • 2 c
    shredded cheddar cheese, divided
  • dash(es)
    garlic powder
  • dash(es)
    salt and pepper
  • 2 Tbsp
  • 4-6 slice
    leftover cooked bacon, crumbled (optional)

How to Make Ginger's Twice Baked Mashed Potatoes


  1. Mix the potatoes, sour cream, a handful of the cheese, seasonings, and bacon (optional) together to combine. Spread into an 8 x 8 buttered casserole, top with remaining cheese and bake at 350 about 30 min. (if ingredients are really cold when putting in oven it may take a few extra mins.)
