I grew up with this salad and a good Bratwurst ( Johnson's will do they are really tasty). This salad is ONLY for people that like vinegar and pickles! You can eat left overs cold but I prefer to warm it up just a bit. Enjoy!

  • 5 lb
    white potatoes
  • 4
    eggs
  • 1 lb
    bacon
  • 5
    dill pickles
  • 1 md
    onion
  • 1 beef boullion
  • 2 tsp
    parsley
  • 1 Tbsp
    italien seasoning mix
  • 1 tsp
    dill, dried
  • 1 Tbsp
    paprika powder
  • 2 c
    white vinegar
  • 1 c
    dill pickle juice
  • 1 tsp
    season salt

    boil potatoes in water with a little salt, I also add the eggs to boil in the same pot. Cut the bacon into small strips and brown to crisp, drain half of the fat, add the chopped up onion until the onion is glazed,add your vinegar, pickle juice and all the spices. Let boil up then turn off and let cool.

    When potatoes are done run cold water over them until cool enough to touch,peel and slice, put in a bowl, peel eggs, chop in small pieces and add, cut pickles in small pieces and add to potatoes and eggs. Now poor your bacon mixture over the potatoes and gently stir trying not to break up the potatoes to bad. The liquid should still be warm when you pouring it over the potatoes, should be served at room temp. Guten Appetit!
