german potato salad
This is a nice change from the regular potato salads. It is the closest recipe I have that reminds me of going to the Friday fish frys when Catholics were not allowed to eat meat on Friday. All the local bars had kitchens and a room in the back where the owner's wife cooked the dinner. One week it would be regular potato salad, the next week German Potato Salad. I was always hoping for the German! Hope you enjoy...

Ingredients
- 6 medium potatoes
- 6 slices bacon
- 3/4 cup chopped onions
- 2 tablespoons flour
- 1 1/2 tablespoons sugar
- 1/2 teaspoon celery seeds
- dash pepper
- 1/3 cup vinegar
- 2/3 cup water
How To Make german potato salad

Step 1Boil potatoes in their jackets. Peel and slice thinly.

Step 2Fry bacon slowly and drain. Saute the onions in the bacon grease until golden brown.

Step 3Blend in the flour, sugar, salt, celery seeds and pepper; cook over low heat, stirring until smooth and bubbly. Remove from heat.

Step 4Stir in vinegar and water and bring to a boil for 1 minute, stirring constantly. Stir in potatoes and crumbled bacon.

Step 5Remove from heat and cover until served.
