This is a nice change from the regular potato salads. It is the closest recipe I have that reminds me of going to the Friday fish frys when Catholics were not allowed to eat meat on Friday. All the local bars had kitchens and a room in the back where the owner's wife cooked the dinner. One week it would be regular potato salad, the next week German Potato Salad. I was always hoping for the German! Hope you enjoy...

Ingredients

  • 6 medium potatoes
  • 6 slices bacon
  • 3/4 cup chopped onions
  • 2 tablespoons flour
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon celery seeds
  • dash pepper
  • 1/3 cup vinegar
  • 2/3 cup water

How To Make german potato salad

  • Step 1
    Boil potatoes in their jackets. Peel and slice thinly.
  • Step 2
    Fry bacon slowly and drain. Saute the onions in the bacon grease until golden brown.
  • Step 3
    Blend in the flour, sugar, salt, celery seeds and pepper; cook over low heat, stirring until smooth and bubbly. Remove from heat.
  • Step 4
    Stir in vinegar and water and bring to a boil for 1 minute, stirring constantly. Stir in potatoes and crumbled bacon.
  • Step 5
    Remove from heat and cover until served.
