This recipe has been in the family awhile. Not sure where it came from.

Ingredients

  • 6 - medium size russet potatos
  • 1 cup cold water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 3 - strips of bacon
  • 2 tablespoons bacon grease
  • 1 - small onion thinly sliced
  • - salt and pepper to taste

How To Make german potato salad

  • Step 1
    Cook potatos in their jackets till tender butnot falling open, Pour off water and shake dry over heat.
  • Step 2
    When potatos cool peel and slice and place in casserole dish
  • Step 3
    Add thinly sliced onion on top of potatos
  • Step 4
    Take 3 strips of bacon and dice, fry until crisp, but watch carefully so it doesn't burn. Drain bacon pieces on paper towel. Reserve 2 Tablespoons bacon fat.
  • Step 5
    Make sauce using water, vinegar, sugar and cornstarch. Boil till thick, about the consistancy of pudding. Taste sauce it should taste sweet/sour.
  • Step 6
    Add 2 tablespoons of reserved bacon grease, add diced bacon. Taste and adjust salt and pepper accordingly.
  • Step 7
    Cool till lukewarm
  • Step 8
    Pour sauce over sliced potatos and onion in casserole dish.
  • Step 9
    Serve immediatly. Best served warm.
