Ingredients

  • 3 pounds red potatoes, peeled
  • 3/4 cup onions, chopped
  • 8 slices bacon, cut in 1" pieces
  • 2 tablespoons flour
  • 1/4 teaspoon celery seeds
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 4 tablespoons sugar
  • 1 cup water
  • 1/2 cup cider vinegar
  • 1/4 cup fresh parsley, chopped

How To Make german potato salad

  • Step 1
    Dice the potatoes and cook in lightly salted water until tender. Drain and keep warm. You can also boil the whole potatoes until cooked through, cool, and cut into 1/4 inch slices. This is the more traditional way.
  • Step 2
    Meanwhile, fry bacon until crisp. Remove bacon and discard all but 3 tablespoons of the drippings. Add the onions and cook until tender, about 5 minutes.
  • Step 3
    Combine the dry ingredients. Add them to the onions and stir to blend. Add water and vinegar. Bring to a boil until it thickens up.
  • Step 4
    Pour over the hot cooked potatoes. Add bacon and parsley. Toss everything gently to coat.
  • Step 5
    The salad may be kept warm in a 200F oven, or in a crock pot set to low.
