Ingredients
- 3 pounds red potatoes, peeled
- 3/4 cup onions, chopped
- 8 slices bacon, cut in 1" pieces
- 2 tablespoons flour
- 1/4 teaspoon celery seeds
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 4 tablespoons sugar
- 1 cup water
- 1/2 cup cider vinegar
- 1/4 cup fresh parsley, chopped
How To Make german potato salad

Step 1Dice the potatoes and cook in lightly salted water until tender. Drain and keep warm. You can also boil the whole potatoes until cooked through, cool, and cut into 1/4 inch slices. This is the more traditional way.

Step 2Meanwhile, fry bacon until crisp. Remove bacon and discard all but 3 tablespoons of the drippings. Add the onions and cook until tender, about 5 minutes.

Step 3Combine the dry ingredients. Add them to the onions and stir to blend. Add water and vinegar. Bring to a boil until it thickens up.

Step 4Pour over the hot cooked potatoes. Add bacon and parsley. Toss everything gently to coat.

Step 5The salad may be kept warm in a 200F oven, or in a crock pot set to low.
