german hot potato salad

This recipe comes from my dear friend Gabrielle. On one of her visits from Germany she made it for me. It is a winner. I serve it alongside my Viener Schnitzel It's wonderful. Enjoy

Ingredients

  • 6 large red potatoes washed & scrubbed not peeled
  • 1 pound bacon
  • 1 large vidalia onion sliced thin
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

How To Make german hot potato salad

  • Step 1
    In a large heavy pot boil large red potatoes with peels in salted water.
  • Step 2
    While potatoes are cooking. Fry up the pound of bacon until crisp drain and crumble and set aside.
  • Step 3
    Next slice large vidalia onion thin and set aside. When potatoes are tender drain water and peel and slice them. Add sliced onions to the potatoes mix gently carefull not to break up the potatoes.
  • Step 4
    Mix the olive oil and vinegar together very well add the teaspoon of salt and the black pepper and mix well again. Pour over the hot potatoes. Sprinkle crisp bacon over the potatoes and toss again very carefully so as to not break the potaotes. Serve with Vieneer Schnitzel. Enjoy
