Ingredients
- POTATOES
- 4 large russet potatoes, cleaned
- 8 cloves garlic, smashed
- 1 small onion, quartered
- 1 1/2 cups apple cider vinegar
- 2 tablespoons liquid smoke
- 1 cup sugar
- BACON DRESSING
- 12 slices bacon
- 1/4 cup apple cider vinegar
- 1/3 cup sugar
- 4 scallions, chopped

Step 1Poke holes in the potatoes. Salt 6 cups of water and add the potatoes, garlic, onion, vinegar, liquid smoke, and sugar. Bring to a boil and reduce to a simmer, and simmer about 45 minutes until a fork can go through the potatoes easily.

Step 2Meanwhile, preheat the oven to 400 degrees. Lay the strips of bacon on two foil-lined baking sheets. Place in the oven and bake until the bacon is crisp. Remove from the oven and let cool a bit. Remove foil from one sheet and pour the bacon grease on the baking sheet.

Step 3Crumble the bacon. Add vinegar and sugar to a saucepan and cook until the sugar dissolves. Stir in the scallions and bacon. Remove the potatoes from the liquid, discarding the liquid.

Step 4Place the potatoes in the pan with the bacon grease and season them with salt. Bake another ten minutes, rolling them around once.

Step 5Cut the potatoes down the center. Push out potatoes and drizzle the bacon vinaigrette over top.
