Ingredients

  • 2 1/2 pounds red potatoes, small
  • - water
  • 1/2 cup olive oil, extra virgin
  • 10 cloves garlic, minced
  • 2 teaspoons parsley, fresh, chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make garlic mashed potatoes

  • Step 1
    Do not peel potatoes. Scrub & quarter & cook in enough water to cover by 1" for 10 - 20 minutes until tender; drain.
  • Step 2
    Heat oil over medium heat. Add garlic & cook until tender & golden.
  • Step 3
    Mash unpeeled potatoes with parsley, salt & pepper. Stir in garlic & oil mixture until mixed. Serve while warm.
