- 2 1/2 pounds red potatoes, small
- - water
- 1/2 cup olive oil, extra virgin
- 10 cloves garlic, minced
- 2 teaspoons parsley, fresh, chopped
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
How To Make garlic mashed potatoes

Step 1Do not peel potatoes. Scrub & quarter & cook in enough water to cover by 1" for 10 - 20 minutes until tender; drain.

Step 2Heat oil over medium heat. Add garlic & cook until tender & golden.

Step 3Mash unpeeled potatoes with parsley, salt & pepper. Stir in garlic & oil mixture until mixed. Serve while warm.
